Chef Bilal Aldalou brings his newly established pop up Kaiyō to our very own Cutlery Works for its first chapter!
A former apprentice at the University of Manchester, Bil worked in Barnsley as a chef de partie whilst also attending college. Almost as soon as college ended, he moved down south to a little sleepy village called Chinnor, Oxfordshire, where he worked as a pastry chef in a Michelin star gastropub called The Sir Charles Napier.
On his return to Sheffield, Bil found a job in a little corner gastropub called The Milestone, where he started as demi chef and was soon made sous chef. Leaving The Milestone late last year, he has created a pop restaurant called Kaiyō, which he is excited to launch at Cutlery Works this spring.
The concept of Kaiyō is a seafood restaurant, with Japanese-French style cooking in a 6 course tasting menu format.
Bil loves to to work by a ‘nose-to-tail’ ethos, using everything he can from any ingredient and avoiding waste.
The pop up will be taking place on Wednesday March 11th and Thursday March 12th 2020, each at 7pm with limited seats available.
Kaiyō’s 6 course menu is priced at £35 per person, with drinks pairings available on the day. A £10 per person deposit is required to secure all bookings, paid when purchasing tickets. The remaining £25 will be paid on the night.
